The main application of CMMI for Services (CMMI-SVC) is for service management. In some sense, this is patterned in a way which is similar to another service management model, ITIL. However, whereas ITIL is supposed to be focused on IT Service Management, CMMI-SVC is applicable to service management in a wide sense.
Service management usually means designing, deploying and provisioning services to the customers. Service has a wide meaning which encompasses activities like opening a bank account to booking an air ticket to having dinner served in a restaurant.
Even for those organizations which develop and maintain products (using CMMI-DEV maybe), CMMI-SVC is useful for managing service performance in case of certain activities like resolving customer complaints, time to repair any fault in the product, etc.
